Pakistani meat-and-potato curry

Aloo gosht - “potato and meat” - is a cornerstone of Pakistani home cooking, found weekly on many family tables.

Lamb or goat braises with potatoes in a spiced onion-tomato sauce into a hearty curry eaten with naan or rice.

Ingredients

  • Lamb (bone-in)700 g
  • Potatoes400 g
  • Onions & tomatoes2 each
  • Ginger-garlic paste2 tbsp
  • Turmeric, coriander, chillispices
  • Garam masala1 tsp
  • Fresh corianderto garnish

Preparation

  1. Fry the onions golden in oil, add ginger-garlic.

  2. Add the lamb and sear vigorously.

  3. Reduce in the tomatoes and spices, pour in water.

  4. Braise long until the meat is nearly tender.

  5. Add the potatoes, cook through, serve with garam masala and coriander.
