Aloo Tama

Nepali curry with potatoes and bamboo

Aloo tama is a quintessentially Nepali curry of potatoes (aloo) and fermented bamboo shoots (tama), often with beans added.

The fermented bamboo shoots give the dish its characteristic, pleasant sourness - a beloved festive dish of Newar cuisine.

Ingredients

  • Potatoes500 g
  • Fermented bamboo shoots (tama)200 g
  • Black-eyed beans150 g
  • Turmeric & cumin1 tsp each
  • Ginger-garlic paste1 tbsp
  • Tomato & chillisome of each
  • Sichuan pepper (timur)1 pinch

Preparation

  1. Boil the beans until soft.

  2. Fry ginger-garlic with turmeric and cumin.

  3. Add potatoes, bamboo shoots and tomato.

  4. Pour in water and simmer until the potatoes are soft.

  5. Season with timur and chilli, serve with rice.
