Anmitsu
Japanese dessert with agar cubes and red bean paste
Anmitsu is a traditional Japanese dessert from the Meiji era: small, clear cubes of kanten (agar) crowned with sweet red bean paste.
Fruit, mochi balls and a drizzle of dark sugar syrup (kuromitsu) complete it; light, cool and elegant at once.

Ingredients
- Kanten / agar-agar4 g
- Water500 ml
- Sweet red bean paste (anko)200 g
- Mochi balls (shiratama)1 handful
- Fresh fruitto taste
- Kuromitsu (dark syrup)to drizzle

Preparation
Dissolve agar in water, boil and pour into a mould.
Let set until firm, cut into cubes.
Boil the shiratama balls until they float.
Arrange agar cubes, anko, mochi and fruit in bowls.
Drizzle with kuromitsu and serve cold.
