Arroz Caldo

Filipino rice porridge with chicken and ginger

Arroz caldo is a warming Filipino rice porridge whose name nods to Spanish colonial influence, while the technique descends from Chinese congee.

Plenty of ginger makes it aromatic and soothing - a comfort dish for rainy days and colds, crowned with fried garlic and egg.

Ingredients

  • Chicken thighs500 g
  • Short-grain rice200 g
  • Ginger1 large piece
  • Garlic & onionsome of each
  • Fish sauce2 tbsp
  • Chicken broth1.5 l
  • Boiled egg, spring onion, limeto serve

Preparation

  1. Fry the garlic, onion and ginger.

  2. Add the chicken and sear briefly.

  3. Pour in rice and broth, season with fish sauce.

  4. Simmer until the rice breaks down creamy.

  5. Serve with egg, fried garlic, spring onion and lime.
