Ayam Bakar
Indonesian grilled chicken with sweet soy glaze
Ayam bakar - “grilled chicken” - is an Indonesian and Malay classic in which the chicken is first braised in spices, then glazed over coals.
The glaze of sweet soy sauce (kecap manis) caramelises over the fire; served with rice, sambal and fresh vegetables.

- Chicken pieces1 kg
- Sweet soy sauce (kecap manis)4 tbsp
- Shallots, garlic, candlenutsspice paste
- Galangal & lemongrass1 each
- Coconut milk200 ml
- Tamarind & palm sugar1 tbsp each
- Sambal & riceto serve

Preparation
Fry the spice paste with galangal and lemongrass.
Add the chicken, braise with coconut milk and tamarind.
Glaze with kecap manis and palm sugar.
Caramelise the chicken all over on coals or in the oven.
Brush with remaining glaze, serve with rice and sambal.
