Indonesian spiced fried chicken

Ayam goreng is ubiquitous in Indonesia and differs from Western fried chicken: the chicken is first braised in spices.

It first steeps in turmeric, garlic and lemongrass, then is fried – so it stays juicy and is seasoned right to the bone.

Ingredients

  • Chicken pieces1 kg
  • Turmeric & coriander seeds1 tsp each
  • Garlic & shallotsas paste
  • Lemongrass & bay leaves2 each
  • Galangal2 cm
  • Saltto taste
  • Frying oilas needed

Preparation

  1. Mix the spice paste with turmeric and coriander.

  2. Rub the chicken with paste, lemongrass and galangal.

  3. Braise covered in a little water until tender.

  4. Remove and drain well.

  5. Fry in hot oil until golden brown and crisp.
