Cambodian grilled pork over broken rice
Bai sach chrouk is Cambodia's most beloved breakfast: thinly sliced, marinated pork slowly grilled over coals.
It is served over broken rice with pickled vegetables and a clear soup - a simple yet deeply satisfying morning meal.

Ingredients
- Pork (thinly sliced)500 g
- Coconut water or coconut milk150 ml
- Garlic & sugarsome of each
- Fish sauce & soy sauce1 tbsp each
- Broken riceto serve
- Pickled cucumber & radish1 handful

Preparation
Marinate the pork in coconut water, garlic, sugar and fish sauce.
Grill slowly over coals or in a pan until caramelised.
Cook the broken rice.
Make a quick pickle of vinegar, sugar and salt.
Plate the pork over rice, serve with pickled vegetables.
