Baingan Bharta

North Indian roasted eggplant curry

Baingan bharta is a smoky eggplant dish from Punjab and North India. Its hallmark is the whole eggplant roasted over an open flame.

The roasted, mashed eggplant is simmered with onions, tomatoes and spices – smoky, spicy and vegan; classically served with roti or rice.

Ingredients

  • Large eggplants2
  • Onions2
  • Tomatoes3
  • Ginger-garlic paste1 tbsp
  • Cumin & garam masala1 tsp each
  • Green chilli & turmericto taste
  • Coriander1 handful

Preparation

  1. Roast the eggplants over an open flame until the skin chars.

  2. Peel and mash the flesh.

  3. Toast cumin, fry the onions golden brown.

  4. Reduce ginger-garlic, tomatoes and spices.

  5. Add the eggplant mash, simmer thick, serve with coriander.
