Bakso

Indonesian beef meatball soup

Bakso is one of Indonesia's most loved street foods: bouncy beef meatballs in a clear, savoury broth. Even former US president Obama raved about it.

The meatballs' signature bounce comes from finely blended meat with tapioca starch; served with noodles, tofu and crisp shallots.

Ingredients

  • Minced beef (lean)500 g
  • Tapioca starch4 tbsp
  • Garlic & shallotssome of each
  • Beef broth1.5 l
  • Glass noodles & yellow noodles100 g each
  • Pak choi & bean sprouts1 handful
  • Fried shallots & spring onionto garnish

Preparation

  1. Blend the beef finely with garlic, starch, salt and iced water.

  2. Form meatballs with wet hands.

  3. Cook in simmering broth until they float.

  4. Cook noodles and vegetables separately, place in bowls.

  5. Add meatballs and broth, serve with fried shallots.
