Vietnamese steamed filled buns

Bánh bao are fluffy steamed yeast-dough buns with a savoury filling, brought to Vietnam by Chinese immigrants and refined there.

The filling of minced pork, glass noodles, mushrooms and a piece of quail or boiled egg makes them a beloved breakfast and snack.

Ingredients

  • Flour & dry yeast300 g + 1 tsp
  • Sugar & milk2 tbsp + 150 ml
  • Minced pork300 g
  • Glass noodles & wood-ear mushroomssome of each
  • Quail eggs or boiled egg6
  • Shallots & soy saucesome of each

Preparation

  1. Knead flour, yeast, sugar and milk into a soft dough, prove.

  2. Season the minced pork with glass noodles, mushrooms and shallots.

  3. Portion the dough, enclose filling and a piece of egg.

  4. Let the buns prove briefly again.

  5. Steam 15 minutes until fluffy and risen.
