Pyramid-shaped rice-dough parcel with pork

Bánh giò is a pyramid-shaped Vietnamese parcel of soft rice-and-tapioca-flour paste, wrapped in banana leaves.

The filling of minced pork, wood-ear mushrooms and shallots makes it savoury; a beloved, filling breakfast from the streets of Hanoi.

Ingredients

  • Rice flour & tapioca flour200 g + 50 g
  • Pork or bone broth1 l
  • Minced pork250 g
  • Wood-ear mushrooms & shallotssome of each
  • Fish sauce & peppersome of each
  • Banana leaves4

Preparation

  1. Cook rice and tapioca flour with broth, stirring, into a thick paste.

  2. Fry minced pork with mushrooms, shallots and fish sauce.

  3. Fold banana leaves into cones, layer paste and filling.

  4. Shape into pyramids and seal.

  5. Steam about 30 minutes, let cool a little.
