Beef Bhuna

Bengali dark, dry beef curry

Beef bhuna is a Bengali curry in which the meat is slowly “bhuna-ed” - dry-fried - in its own spices.

The long frying turns the masala deep-dark and intense; the beef absorbs the full aroma of the spices.

Ingredients

  • Beef (cubed)700 g
  • Onions3
  • Ginger-garlic paste2 tbsp
  • Turmeric, cumin, corianderspices
  • Garam masala & chilli powder1 tsp each
  • Cinnamon, cardamom, baywhole spices
  • Green chilli & fresh corianderto garnish

Preparation

  1. Fry the onions deep golden in oil.

  2. Add ginger-garlic and whole spices.

  3. Stir in beef and ground spices, sear vigorously.

  4. Braise slowly with a little water, repeatedly “bhuna-ing”.

  5. Reduce until the sauce clings dark and thick, garnish.
