Bhindi Masala

Indian okra curry with onions

Bhindi masala is a popular North Indian dish of okra (bhindi), dry-fried with onions, tomatoes and spices.

The trick is to sear the okra hard without much stirring so it stays aromatic and lightly crisp rather than slimy.

Ingredients

  • Okra pods500 g
  • Onions2
  • Tomatoes2
  • Turmeric, coriander, garam masala1 tsp each
  • Amchur (mango powder)1 tsp
  • Ginger-garlic paste1 tbsp
  • Vegetable oil3 tbsp

Preparation

  1. Wash the okra, dry well and cut into pieces.

  2. Sear the okra hard in hot oil, remove.

  3. Fry onions, ginger-garlic and tomatoes into a masala.

  4. Season with spices and amchur.

  5. Return the okra, toss briefly and serve.
