Bhuna Khichuri

Toasted rice-and-lentil dish from Bangladesh

Bhuna khichuri is a savoury rice-and-lentil dish and a comfort food of Bangladesh, made especially on rainy days and at festivals like Eid.

Unlike the porridge version, the rice and lentils are toasted first so the grains stay separate; whole spices give it depth and warmth.

Ingredients

  • Basmati rice300 g
  • Yellow mung lentils (moong dal)150 g
  • Onions2
  • Ginger-garlic paste1 tbsp
  • Bay, cinnamon, cardamom, cloveswhole spices
  • Turmeric & cumin1 tsp each
  • Ghee3 tbsp

Preparation

  1. Toast the mung lentils without oil until fragrant, then wash.

  2. Fry the onions in ghee, add the whole spices.

  3. Stir in ginger-garlic, turmeric and cumin.

  4. Toast the rice and lentils briefly.

  5. Pour in hot water and cook covered until grainy and tender.
