Bhuna Khichuri
Toasted rice-and-lentil dish from Bangladesh
Bhuna khichuri is a savoury rice-and-lentil dish and a comfort food of Bangladesh, made especially on rainy days and at festivals like Eid.
Unlike the porridge version, the rice and lentils are toasted first so the grains stay separate; whole spices give it depth and warmth.

- Basmati rice300 g
- Yellow mung lentils (moong dal)150 g
- Onions2
- Ginger-garlic paste1 tbsp
- Bay, cinnamon, cardamom, cloveswhole spices
- Turmeric & cumin1 tsp each
- Ghee3 tbsp

Preparation
Toast the mung lentils without oil until fragrant, then wash.
Fry the onions in ghee, add the whole spices.
Stir in ginger-garlic, turmeric and cumin.
Toast the rice and lentils briefly.
Pour in hot water and cook covered until grainy and tender.
