Korean cold spicy noodles

Bibim guksu are cold wheat noodles in a spicy, sweet-and-sour gochujang sauce - a refreshing Korean summer dish.

Crisp vegetables, sesame and a splash of vinegar make it lively; often garnished with half a boiled egg.

Ingredients

  • Thin wheat noodles (somyeon)200 g
  • Gochujang2 tbsp
  • Rice vinegar & sugar1 tbsp each
  • Soy sauce & sesame oil1 tbsp each
  • Cucumber & carrot1/2 each
  • Kimchi1 handful
  • Sesame & eggsome / 1

Preparation

  1. Stir gochujang, vinegar, sugar, soy sauce and sesame oil into a sauce.

  2. Cut the vegetables into fine strips.

  3. Cook the noodles, chill and drain well.

  4. Toss the noodles with sauce and vegetables.

  5. Garnish with sesame and half a boiled egg.
