Bibim Naengmyeon

Korean cold buckwheat noodles, spicy-dressed

Bibim naengmyeon are ice-cold, chewy buckwheat noodles dressed in a fiery gochujang sauce rather than served in broth.

Prized in the Korean summer, they balance spicy, sweet and sour; crowned with cucumber, pear, egg and a touch of sesame oil.

Ingredients

  • Naengmyeon (buckwheat noodles)300 g
  • Gochujang3 tbsp
  • Rice vinegar & sugar1 tbsp each
  • Sesame oil & garlicsome of each
  • Beef (cooked)150 g
  • Cucumber, pear, eggto garnish

Preparation

  1. Stir gochujang, rice vinegar, sugar, garlic and sesame oil into a sauce.

  2. Cook the noodles, chill ice-cold at once and drain well.

  3. Toss the noodles with the spicy sauce.

  4. Top with beef, cucumber, pear and half an egg.

  5. Serve ice-cold.
