Filipino pork stew in coconut milk

Bicol express comes from the Bicol region of Luzon, known for its love of chilli and coconut - named after the train of the same name.

Pork braises in creamy coconut milk with plenty of chilli and shrimp paste into a fiery, creamy stew.

Ingredients

  • Pork belly (cubed)600 g
  • Coconut milk400 ml
  • Green & red chilliplenty
  • Shrimp paste (bagoong)2 tbsp
  • Garlic, onion, gingersome of each
  • Vegetable oil1 tbsp

Preparation

  1. Fry the garlic, onion and ginger.

  2. Add the pork and sear.

  3. Stir in the shrimp paste, pour in coconut milk.

  4. Braise covered until the meat is tender.

  5. Add plenty of chilli, reduce briefly, serve with rice.
