Bò Kho

Vietnamese beef stew with lemongrass

Bò kho is a fragrant beef stew that shows the French influence on Vietnamese cooking and is often eaten for breakfast with baguette.

Beef braises with lemongrass, star anise and annatto until tender; carrots add sweetness, and the sauce is fragrant with spice and herbs.

Ingredients

  • Beef shin or brisket, cubed800 g
  • Lemongrass2 stalks
  • Star anise & cinnamon1 each
  • Annatto oil2 tbsp
  • Carrots3
  • Tomato paste & fish sauce2 tbsp each
  • Baguette or rice noodlesto serve

Preparation

  1. Marinate the beef with fish sauce, garlic and lemongrass.

  2. Sear hard in annatto oil.

  3. Add tomato paste, star anise and cinnamon.

  4. Cover with water and braise tender for 90 minutes.

  5. Add the carrots, finish cooking, serve with baguette.
