Bubur Ayam

Indonesian rice porridge with chicken

Bubur ayam is an Indonesian breakfast: a creamy rice porridge dressed with shredded chicken and a host of toppings.

Crunchy soybeans, fried shallots, cakwe (dough sticks) and a drizzle of sweet soy sauce make every bowl gloriously layered.

  • Rice200 g
  • Chicken breast300 g
  • Chicken broth1.5 l
  • Sweet soy sauce (kecap manis)to serve
  • Fried shallots & peanuts1 handful each
  • Spring onion & celerysome
  • Cakwe (fried dough sticks)optional

Preparation

  1. Cook the rice in plenty of chicken broth into a creamy porridge.

  2. Cook the chicken in the broth and shred.

  3. Ladle the porridge into bowls.

  4. Top with chicken, fried shallots, peanuts and spring onion.

  5. Drizzle with kecap manis, serve with cakwe.
