Korean “army base stew”

Budae jjigae – “army base stew” – arose after the Korean War, when food was scarce and leftovers from US military bases like Spam and sausages were used.

Today it is a nostalgic comfort stew: spicy gochujang broth meets sausage, tofu, kimchi and instant noodles – hearty and convivial.

Ingredients

  • Luncheon meat (Spam) & sausages200 g / 4
  • Kimchi150 g
  • Tofu200 g
  • Gochujang & gochugaru1 tbsp each
  • Garlic & spring onionsome of each
  • Instant ramen noodles1 pack
  • Broth800 ml

Preparation

  1. Layer Spam, sausages, tofu and kimchi in a shallow pot.

  2. Add gochujang, gochugaru and garlic.

  3. Pour in the broth and bring to a boil.

  4. Add the instant noodles and let them cook.

  5. Scatter with spring onion and serve hot at the table.
