Bún Thịt Nướng

Vietnamese rice noodles with grilled pork

Bún thịt nướng is a cool noodle bowl from southern Vietnam, especially loved in Saigon. Marinated, grilled pork sits over rice noodles.

Fresh herbs, lettuce and pickled vegetables keep the bowl light; it is all dressed with nuoc cham and tossed before eating.

Ingredients

  • Pork neck, thinly sliced500 g
  • Thin rice noodles (bún)300 g
  • Lemongrass & garlicsome of each
  • Fish sauce & sugar2 tbsp each
  • Lettuce, mint, coriander1 bunch
  • Pickled carrot & cucumber1 handful
  • Nuoc chamto serve

Preparation

  1. Marinate the pork with lemongrass, garlic, fish sauce and sugar.

  2. Cook the rice noodles, refresh and drain.

  3. Grill the pork over charcoal or in a pan.

  4. Place noodles in bowls, herbs and lettuce on top.

  5. Lay on the pork, dress with nuoc cham, toss.
