Buta no Shogayaki

Japanese ginger pork

Buta no shogayaki - “pork fried in ginger” - is a cornerstone of Japanese home cooking and a classic of teishoku sets.

Thin pork slices are fried in a sauce of plenty of grated ginger, soy sauce, mirin and sake - quick, savoury and aromatic.

Ingredients

  • Pork (thinly sliced)400 g
  • Fresh ginger (grated)2 tbsp
  • Soy sauce2 tbsp
  • Mirin & sake1 tbsp each
  • Onion1
  • Cabbage (to serve)1 handful

Preparation

  1. Whisk ginger, soy sauce, mirin and sake into a sauce.

  2. Fry the onion strips in the pan.

  3. Add the pork slices and sear.

  4. Deglaze with the ginger sauce and glaze.

  5. Serve with finely shredded cabbage and rice.
