Buta no Shogayaki
Japanese ginger pork
Buta no shogayaki - “pork fried in ginger” - is a cornerstone of Japanese home cooking and a classic of teishoku sets.
Thin pork slices are fried in a sauce of plenty of grated ginger, soy sauce, mirin and sake - quick, savoury and aromatic.

Ingredients
- Pork (thinly sliced)400 g
- Fresh ginger (grated)2 tbsp
- Soy sauce2 tbsp
- Mirin & sake1 tbsp each
- Onion1
- Cabbage (to serve)1 handful

Preparation
Whisk ginger, soy sauce, mirin and sake into a sauce.
Fry the onion strips in the pan.
Add the pork slices and sear.
Deglaze with the ginger sauce and glaze.
Serve with finely shredded cabbage and rice.
