Buuz are steamed dumplings and a central dish of Mongolian cuisine, especially at the New Year festival Tsagaan Sar, when families make them by the hundreds.
Filled with beef or mutton, onion and garlic, they are folded into little purses and steamed so the juicy meat juices stay inside.

Wheat flour★300 g
Beef or mutton mince (not lean)★400 g
Onion★2
Garlic★3 cloves
Caraway or cumin1 tsp

Knead flour with water and salt into a firm dough, let rest.

Mix mince with finely chopped onion, garlic and spices.

Roll the dough into small circles.

Place filling and pleat closed into purses.
