Buuz

Mongolian steamed meat dumplings

Buuz are steamed dumplings and a central dish of Mongolian cuisine, especially at the New Year festival Tsagaan Sar, when families make them by the hundreds.

Filled with beef or mutton, onion and garlic, they are folded into little purses and steamed so the juicy meat juices stay inside.

Ingredients

  • Wheat flour300 g
  • Beef or mutton mince (not lean)400 g
  • Onion2
  • Garlic3 cloves
  • Caraway or cumin1 tsp
  • Salt & pepperto taste
  • Waterfor the dough

Preparation

  1. Knead flour with water and salt into a firm dough, let rest.

  2. Mix mince with finely chopped onion, garlic and spices.

  3. Roll the dough into small circles.

  4. Place filling and pleat closed into purses.

  5. Steam for 15–18 minutes, serve hot.
