Vietnamese caramelised fish in a clay pot

Cá kho tộ is a comfort dish from the Mekong Delta and sits on many Vietnamese family tables. Fish braises in a traditional clay pot.

A caramel sauce of sugar and fish sauce coats the fish sweet and salty; slowly braised, the flesh firms up and turns deeply savoury.

Ingredients

  • Firm fish (e.g. pangasius)600 g
  • Sugar (for caramel)3 tbsp
  • Fish sauce3 tbsp
  • Shallots & garlicsome of each
  • Ginger2 cm
  • Coconut water200 ml
  • Black pepper & spring onionto taste

Preparation

  1. Melt the sugar into a golden-brown caramel.

  2. Sweat the shallots, garlic and ginger briefly.

  3. Add the fish, pour in fish sauce and coconut water.

  4. Braise gently covered until the sauce is syrupy.

  5. Finish with pepper and spring onion, serve with rice.
