Noodle speciality from the old town of Hội An

Cao lầu is the famed noodle speciality of the Vietnamese port town Hội An, uniting Chinese, Japanese and Vietnamese influences from its trading history.

The firm, slightly smoky noodles are served with grilled pork, fresh herbs and crisp crackers – with only a little savoury sauce.

Ingredients

  • Thick rice noodles (cao lầu style)400 g
  • Pork neck (char siu style)400 g
  • Soy sauce & five-spice1 tbsp each
  • Garlic & shallotssome of each
  • Fresh herbs & lettuce1 bunch
  • Crisp rice crackersto garnish
  • Bean sprouts1 handful

Preparation

  1. Marinate the pork neck in soy sauce, five-spice and garlic.

  2. Sear or grill it and slice.

  3. Cook the noodles and drain.

  4. Toss the noodles with a little pan juice and soy sauce.

  5. Plate with pork, herbs, sprouts and crackers.
