Crispy fried spring rolls from Vietnam

Chả giò (nem rán in the north) are fried spring rolls and a festive classic of Vietnamese cuisine. They differ from the fresh summer rolls.

A filling of pork, prawns, glass noodles and wood-ear mushrooms is wrapped in rice paper and fried golden; served with lettuce, herbs and nuoc cham.

Ingredients

  • Rice paper20 sheets
  • Minced pork250 g
  • Prawns, chopped150 g
  • Glass noodles & wood-earsome of each
  • Carrot & shallot1 handful
  • Fish sauce & pepperto taste
  • Nuoc cham (dip)to serve

Preparation

  1. Mix pork, prawns, soaked glass noodles, mushrooms and vegetables.

  2. Season with fish sauce and pepper.

  3. Wrap the filling in moistened rice paper.

  4. Fry slowly in hot oil until golden and crisp.

  5. Serve with lettuce, herbs and nuoc cham.
