Vietnamese chicken rice porridge

Cháo gà is the Vietnamese chicken rice porridge, a comfort dish for cold days and recovery - gentle, nourishing and aromatic.

The rice is cooked soft in chicken broth; ginger, fish sauce and plenty of herbs give the simple porridge depth and freshness.

Ingredients

  • Chicken portions500 g
  • Rice150 g
  • Ginger1 piece
  • Fish sauce2 tbsp
  • Spring onion & coriander1 handful
  • Fried shallotsto garnish
  • Lime & pepperto serve

Preparation

  1. Cook the chicken with ginger in water, keep the broth.

  2. Cook the rice in the broth into a creamy porridge.

  3. Shred the chicken and add.

  4. Season with fish sauce and pepper.

  5. Serve with spring onion, coriander, fried shallots and lime.
