Steamed yeast buns with BBQ pork

Char siu bao are fluffy steamed buns with a sweet BBQ pork filling and a cornerstone of Cantonese dim sum culture.

The soft white yeast dough splits gently as it steams, revealing the glossy char siu filling – a teahouse classic.

Ingredients

  • Wheat flour (bao flour)300 g
  • Dry yeast & sugar1 tsp / 3 tbsp
  • Char siu (BBQ pork), diced250 g
  • Oyster sauce & soy sauce1 tbsp each
  • Hoisin sauce1 tbsp
  • Cornstarch1 tsp
  • Shallot1

Preparation

  1. Knead yeast, flour, sugar and water into a soft dough, prove.

  2. Fry char siu with shallot, bind with the sauces, cool.

  3. Portion the dough, press into discs, place the filling.

  4. Fold into purses and let rest briefly.

  5. Steam for 12 minutes until risen.
