Chettinad Chicken
Fiery chicken curry from Tamil Nadu
Chettinad chicken comes from the Chettinad region of Tamil Nadu, whose cuisine is famed for its complex, intense spicing.
A freshly roasted spice blend with dried chilli, stone-flower kalpasi and fennel gives the curry its unmistakable depth.

- Chicken (bone-in)800 g
- Dried red chilli6
- Coriander, fennel & cumin seedsChettinad masala
- Grated coconut3 tbsp
- Onions & tomatoes2 each
- Ginger-garlic paste2 tbsp
- Curry leaves1 sprig

Preparation
Roast chilli, coriander, fennel, cumin and coconut and grind.
Fry onions, ginger-garlic and curry leaves.
Reduce in the tomatoes, add the ground spices.
Add the chicken and braise with a little water.
Cook until the chicken is tender and the sauce thick; serve.
