Chettinad Chicken

Fiery chicken curry from Tamil Nadu

Chettinad chicken comes from the Chettinad region of Tamil Nadu, whose cuisine is famed for its complex, intense spicing.

A freshly roasted spice blend with dried chilli, stone-flower kalpasi and fennel gives the curry its unmistakable depth.

Ingredients

  • Chicken (bone-in)800 g
  • Dried red chilli6
  • Coriander, fennel & cumin seedsChettinad masala
  • Grated coconut3 tbsp
  • Onions & tomatoes2 each
  • Ginger-garlic paste2 tbsp
  • Curry leaves1 sprig

Preparation

  1. Roast chilli, coriander, fennel, cumin and coconut and grind.

  2. Fry onions, ginger-garlic and curry leaves.

  3. Reduce in the tomatoes, add the ground spices.

  4. Add the chicken and braise with a little water.

  5. Cook until the chicken is tender and the sauce thick; serve.
