Steamed rice-flour rolls from the dim sum basket

Cheung fun are silky steamed rice-flour rolls - a classic of Cantonese dim sum and a favourite breakfast in Hong Kong and Guangzhou.

The gossamer-thin rice sheets are rolled around prawns or char siu and doused in a sweetish soy sauce.

Ingredients

  • Rice flour150 g
  • Wheat & corn starch2 tbsp each
  • Water500 ml
  • Prawns200 g
  • Soy sauce & sugarsweet soy sauce
  • Spring onionsome

Preparation

  1. Whisk rice flour, starches and water into a thin batter.

  2. Steam a layer of batter on a tray.

  3. Lay prawns on top and steam briefly.

  4. Roll the rice sheet into a roll and cut into pieces.

  5. Douse with warm sweet soy sauce, garnish.
