Cheung Fun
Steamed rice-flour rolls from the dim sum basket
Cheung fun are silky steamed rice-flour rolls - a classic of Cantonese dim sum and a favourite breakfast in Hong Kong and Guangzhou.
The gossamer-thin rice sheets are rolled around prawns or char siu and doused in a sweetish soy sauce.

- Rice flour150 g
- Wheat & corn starch2 tbsp each
- Water500 ml
- Prawns200 g
- Soy sauce & sugarsweet soy sauce
- Spring onionsome

Preparation
Whisk rice flour, starches and water into a thin batter.
Steam a layer of batter on a tray.
Lay prawns on top and steam briefly.
Roll the rice sheet into a roll and cut into pieces.
Douse with warm sweet soy sauce, garnish.
