Fiery fried chicken from Chennai

Chicken 65 is a crisp-fried, fiery-red chicken starter that originated in the 1960s at the Buhari Hotel in Chennai.

Many legends surround the meaning of the “65”; certain only is the combination of chilli, ginger, garlic and curry leaves.

Ingredients

  • Chicken thighs (cubed)500 g
  • Yoghurt3 tbsp
  • Kashmiri chilli powder1 tbsp
  • Ginger-garlic paste1 tbsp
  • Rice flour & cornstarch2 tbsp each
  • Curry leaves & green chilli1 handful
  • Vegetable oilfor frying

Preparation

  1. Marinate the chicken in yoghurt, chilli, ginger-garlic and starch.

  2. Deep-fry crisp in hot oil, remove.

  3. Bloom curry leaves and green chilli in a little oil.

  4. Add a little chilli-yoghurt sauce.

  5. Toss the fried chicken in it and serve at once.
