Fiery fried chicken from Chennai
Chicken 65 is a crisp-fried, fiery-red chicken starter that originated in the 1960s at the Buhari Hotel in Chennai.
Many legends surround the meaning of the “65”; certain only is the combination of chilli, ginger, garlic and curry leaves.

- Chicken thighs (cubed)500 g
- Yoghurt3 tbsp
- Kashmiri chilli powder1 tbsp
- Ginger-garlic paste1 tbsp
- Rice flour & cornstarch2 tbsp each
- Curry leaves & green chilli1 handful
- Vegetable oilfor frying

Preparation
Marinate the chicken in yoghurt, chilli, ginger-garlic and starch.
Deep-fry crisp in hot oil, remove.
Bloom curry leaves and green chilli in a little oil.
Add a little chilli-yoghurt sauce.
Toss the fried chicken in it and serve at once.
