Filipino chicken-and-tomato braise

Afritada is a Filipino braise in tomato sauce whose name nods to the Spanish colonial influence.

Chicken is braised with potatoes, carrots and peppers in a hearty tomato sauce - a classic for family gatherings and the Sunday table.

  • Chicken pieces800 g
  • Tomato sauce & tomatoes400 g
  • Potatoes & carrots2 each
  • Bell pepper1
  • Garlic & onionsome of each
  • Soy sauce & bay leafsome of each
  • Fish sauce (patis)1 tbsp

Preparation

  1. Sear the chicken all over in oil, remove.

  2. Sweat the garlic and onion.

  3. Add tomato sauce, soy sauce and bay leaf.

  4. Add chicken, potatoes and carrots and braise.

  5. Add the pepper near the end, season with patis, serve with rice.
