Chicken Karahi

Pakistani wok chicken with tomato and ginger

Chicken karahi is named after the karahi, a wok-like iron pan in which the dish is cooked and served. It is ubiquitous in Pakistan.

Chicken is braised hard with tomatoes, ginger, garlic and whole spices until a thick, glossy sauce forms – bold, fresh and without an onion base.

Ingredients

  • Chicken pieces800 g
  • Ripe tomatoes5
  • Ginger & garlic2 tbsp each
  • Green chillies3
  • Cumin & coriander seed1 tsp each
  • Yoghurt2 tbsp
  • Garam masala & corianderto finish

Preparation

  1. Sear the chicken hard in oil.

  2. Add ginger-garlic and whole spices.

  3. Add tomatoes and reduce until the oil separates.

  4. Stir in yoghurt and braise the chicken through.

  5. Finish with chilli, ginger strips, garam masala and coriander.
