Miyazaki fried chicken with tartar sauce

Chicken nanban hails from Miyazaki on Kyūshū: crisp fried chicken dipped in a sweet-and-sour sauce and crowned with creamy tartar sauce.

The dish arose in the 1960s and became the region's speciality - a modern classic of Japanese home cooking.

Ingredients

  • Chicken thighs (boneless)500 g
  • Egg & flour/starch1 + some
  • Rice vinegar, soy sauce, sugarsweet-sour sauce
  • Boiled egg (for tartar)2
  • Mayonnaise3 tbsp
  • Onion & picklesome of each

Preparation

  1. Coat the chicken in egg and flour, fry golden.

  2. Whisk rice vinegar, soy sauce and sugar into a sweet-sour sauce.

  3. Dip the fried chicken into the sauce while still hot.

  4. Chop boiled egg, onion and pickle for tartar, mix with mayo.

  5. Plate the chicken and pour over plenty of tartar sauce.
