Chirashi Sushi

Scattered sushi in a bowl

Chirashi sushi – “scattered sushi” – is a festive, fuss-free form of sushi: instead of rolling, the topping is scattered over seasoned rice.

Fresh sashimi pieces, egg and vegetables shine over sushi rice; in Japan the dish is often served at the girls' festival Hinamatsuri.

Ingredients

  • Sushi rice300 g
  • Rice vinegar, sugar, saltfor seasoning
  • Sashimi fish (salmon, tuna)250 g
  • Eggs (for thin omelette)2
  • Cucumber & avocado1/2 each
  • Nori & sesameto garnish
  • Soy sauce & wasabito serve

Preparation

  1. Cook the rice and mix warm with vinegar, sugar and salt.

  2. Spread the rice in shallow bowls and let cool.

  3. Fry the egg into a thin omelette and cut into strips.

  4. Slice the fish, cucumber and avocado.

  5. Scatter the topping decoratively over the rice, garnish.
