Newari grilled meat with mustard oil and spices

Choila is a speciality of the Newar people in the Kathmandu Valley: grilled meat marinated with hot mustard oil and a wealth of spices.

Traditionally made with buffalo, it is excellent with chicken too; served with chiura (beaten rice) as a festive bite.

Ingredients

  • Chicken thighs500 g
  • Mustard oil3 tbsp
  • Turmeric, cumin, chillispices
  • Ginger-garlic1 tbsp
  • Sichuan pepper (timur)1 tsp
  • Spring onion & coriander1 handful
  • Chiura (beaten rice)to serve

Preparation

  1. Season the chicken and grill over coals or in the oven.

  2. Cut into bite-sized pieces.

  3. Heat the mustard oil until it smokes, let cool a little.

  4. Marinate the meat with mustard oil, spices, timur and ginger-garlic.

  5. Mix with spring onion and coriander, serve with chiura.
