Newari grilled meat with mustard oil and spices
Choila is a speciality of the Newar people in the Kathmandu Valley: grilled meat marinated with hot mustard oil and a wealth of spices.
Traditionally made with buffalo, it is excellent with chicken too; served with chiura (beaten rice) as a festive bite.

- Chicken thighs500 g
- Mustard oil3 tbsp
- Turmeric, cumin, chillispices
- Ginger-garlic1 tbsp
- Sichuan pepper (timur)1 tsp
- Spring onion & coriander1 handful
- Chiura (beaten rice)to serve

Preparation
Season the chicken and grill over coals or in the oven.
Cut into bite-sized pieces.
Heat the mustard oil until it smokes, let cool a little.
Marinate the meat with mustard oil, spices, timur and ginger-garlic.
Mix with spring onion and coriander, serve with chiura.
