Chole Bhature

Spiced chickpeas with airy fried bread

Chole bhature is a North Indian breakfast and feast from Punjab: spicy braised chickpeas (chole) with deep-fried, puffed bread (bhature).

The chickpeas are cooked with tea for their dark colour and given a tangy edge with pomegranate-seed powder (anardana).

Ingredients

  • Chickpeas (soaked overnight)300 g
  • Onions & tomatoes2 each
  • Chana masala & anardana1-2 tbsp each
  • Ginger-garlic paste1 tbsp
  • Flour & yoghurt (for bhature)300 g + 3 tbsp
  • Vegetable oil (for frying)plenty

Preparation

  1. Boil the chickpeas until tender.

  2. Reduce onions, tomatoes, ginger-garlic and spices into a masala.

  3. Add the chickpeas and sharpen with anardana.

  4. Knead flour, yoghurt and water into a dough, let prove.

  5. Roll out bhature and puff-fry in hot oil; serve together.
