Chole Bhature
Spiced chickpeas with airy fried bread
Chole bhature is a North Indian breakfast and feast from Punjab: spicy braised chickpeas (chole) with deep-fried, puffed bread (bhature).
The chickpeas are cooked with tea for their dark colour and given a tangy edge with pomegranate-seed powder (anardana).

Ingredients
- Chickpeas (soaked overnight)300 g
- Onions & tomatoes2 each
- Chana masala & anardana1-2 tbsp each
- Ginger-garlic paste1 tbsp
- Flour & yoghurt (for bhature)300 g + 3 tbsp
- Vegetable oil (for frying)plenty

Preparation
Boil the chickpeas until tender.
Reduce onions, tomatoes, ginger-garlic and spices into a masala.
Add the chickpeas and sharpen with anardana.
Knead flour, yoghurt and water into a dough, let prove.
Roll out bhature and puff-fry in hot oil; serve together.
