Spicy breakfast noodles from Chongqing

Xiao mian - “little noodles” - is Chongqing's most important breakfast: wheat noodles in a bowl of aromatic seasonings, doused with hot broth.

The secret lies in the seasoning base of chilli oil, Sichuan pepper, soy sauce and toasted peanuts that makes every stall a hidden gem.

Ingredients

  • Wheat noodles (thin)250 g
  • Chilli oil2 tbsp
  • Sichuan pepper1 tsp
  • Soy sauce & black vinegar1 tbsp each
  • Garlic & spring onionsome of each
  • Toasted peanuts2 tbsp
  • Pak choi & broth1 handful / 300 ml

Preparation

  1. Put chilli oil, Sichuan pepper, soy sauce, vinegar and garlic in the bowl.

  2. Pour over hot broth.

  3. Cook the noodles and pak choi separately.

  4. Add the noodles to the seasoned broth.

  5. Scatter with peanuts and spring onion.
