Chow Mein

Stir-fried egg noodles from the Cantonese wok

Chow mein simply means “stir-fried noodles” and is among the best-known dishes of Cantonese cuisine. With Chinese emigrants it spread around the world.

Crunchy vegetables, tender egg noodles and a glossy soy sauce – quickly made in a hot wok, it is an everyday classic with countless variations.

Ingredients

  • Egg noodles250 g
  • Chicken breast, sliced250 g
  • Cabbage, carrot, bean sprouts1 handful each
  • Soy sauce (light & dark)1 tbsp each
  • Oyster sauce1 tbsp
  • Garlic & gingersome of each

Preparation

  1. Cook the egg noodles al dente, drain and toss with a little oil.

  2. Sear the chicken in a hot wok, remove.

  3. Stir-fry garlic, ginger and vegetables briefly.

  4. Add noodles and chicken, season with soy and oyster sauce.

  5. Toss until everything glistens. Serve hot.
