Yellow chicken rice from the old town of Hội An

Cơm gà Hội An is the famous chicken-rice speciality of the Vietnamese port town Hội An, bright yellow from cooking in chicken broth with turmeric.

The poached chicken is shredded and served with a fresh herb-and-onion salad over the fragrant rice.

Ingredients

  • Whole chicken portion600 g
  • Jasmine rice300 g
  • Turmeric1 tsp
  • Onion & Vietnamese coriander (rau ram)1 handful
  • Lime & fish saucesome of each
  • Ginger & garlicsome of each

Preparation

  1. Gently poach the chicken in water with ginger, keep the broth.

  2. Cook the rice with turmeric in the chicken broth.

  3. Shred the chicken.

  4. Mix onion, herbs, lime and fish sauce into a salad.

  5. Plate the rice, top with chicken and herb salad, serve.
