Korean spicy braised chicken stew

Dak bokkeumtang is a spicy chicken stew with potatoes, regarded as a cosy Korean home-cooking dish for the whole family.

Bone-in chicken braises with gochujang, gochugaru and vegetables until the sauce thickens; potatoes and carrots soak up the spicy sauce.

Ingredients

  • Bone-in chicken pieces1 kg
  • Gochujang & gochugaru2 tbsp each
  • Soy sauce & sugar1 tbsp each
  • Potatoes & carrots2 each
  • Onion1
  • Garlic & gingersome of each
  • Spring onion & sesameto garnish

Preparation

  1. Mix gochujang, gochugaru, soy sauce, sugar, garlic and ginger.

  2. Blanch the chicken briefly and rinse.

  3. Set on with the spice paste and water.

  4. Add potatoes, carrots and onion.

  5. Simmer until the chicken is done and the sauce is thick.
