Danzai Noodles

Tainan's “carrying-pole” noodles with prawn broth

Danzai mian come from Tainan and trace back to fishermen who, in the storm season, sold noodles from pots balanced on carrying poles (danzai).

A small portion of noodles sits in a clear prawn broth, crowned with savoury minced pork, a prawn and coriander.

Ingredients

  • Thin egg noodles250 g
  • Minced pork250 g
  • Prawns & prawn shells200 g
  • Soy sauce & five-spicesome of each
  • Garlic & shallotssome of each
  • Black vinegar & corianderto serve
  • Bean sprouts1 handful

Preparation

  1. Simmer prawn shells into a clear broth, strain.

  2. Braise minced pork with soy sauce and five-spice into a dark sauce.

  3. Briefly blanch the noodles and bean sprouts.

  4. Put noodles in bowls, pour over hot prawn broth.

  5. Top with the pork sauce, a prawn, vinegar and coriander.
