Di San Xian

Three treasures of the earth from northeast China

Di san xian – “three fresh things of the earth” – is a beloved dish from the Dongbei region in northeast China. It unites three simple vegetables into a savoury whole.

Potato, eggplant and pepper are fried, then tossed in a glossy garlic-soy sauce – filling, savoury and fully plant-based.

Ingredients

  • Eggplant1 large
  • Potatoes2
  • Pepper (green)1
  • Garlic4 cloves
  • Soy sauce (light & dark)1 tbsp each
  • Sugar & cornstarch1 tsp each
  • Vegetable oilfor frying

Preparation

  1. Cut eggplant, potato and pepper into bite-sized pieces.

  2. Fry potato and eggplant golden, the pepper briefly too.

  3. Fry the garlic in a little oil.

  4. Mix soy sauces, sugar and a little water into a sauce.

  5. Add the vegetables, thicken with starch and toss glossy.
