Di san xian – “three fresh things of the earth” – is a beloved dish from the Dongbei region in northeast China. It unites three simple vegetables into a savoury whole.
Potato, eggplant and pepper are fried, then tossed in a glossy garlic-soy sauce – filling, savoury and fully plant-based.

Eggplant★1 large
Potatoes★2
Pepper (green)★1
Garlic★4 cloves
Soy sauce (light & dark)★1 tbsp each
Sugar & cornstarch1 tsp each
Vegetable oilfor frying

Preparation

Cut eggplant, potato and pepper into bite-sized pieces.

Fry potato and eggplant golden, the pepper briefly too.

Fry the garlic in a little oil.

Mix soy sauces, sugar and a little water into a sauce.

Add the vegetables, thicken with starch and toss glossy.
