Japanese little pancakes with sweet bean paste

Dorayaki consist of two small, fluffy pancakes with a filling of sweet adzuki bean paste. The name alludes to a gong (dora).

The cakes are a popular snack in Japan and became especially famous as the favourite food of the manga character Doraemon.

Ingredients

  • Eggs2
  • Sugar80 g
  • Flour120 g
  • Honey1 tbsp
  • Baking powder1 tsp
  • Sweet adzuki bean paste (anko)200 g

Preparation

  1. Whisk eggs with sugar and honey until foamy.

  2. Fold in flour and baking powder, stir smooth with water.

  3. Let the batter rest briefly.

  4. Cook small round pancakes golden on both sides.

  5. Fill pairs with anko and sandwich together.
