Drunken Chicken
Cold chicken in Shaoxing wine from Shanghai
Drunken chicken (zui ji) is a cold starter of Jiangnan cuisine around Shanghai. Poached chicken steeps for hours in a brew of Shaoxing rice wine.
The tender meat takes on the fine wine aroma and is served chilled in slices – an elegant, refreshing dish for warm days.

- Chicken thighs or half chicken700 g
- Shaoxing rice wine300 ml
- Ginger & spring onionsome of each
- Goji berries1 tbsp
- Salt1 tbsp
- Chicken stock200 ml
- Sichuan peppersome

Preparation
Gently poach the chicken with ginger and spring onion.
Refresh at once in iced water so the skin stays firm.
Season the stock with salt and poaching liquid, cool.
Mix with Shaoxing wine and goji berries into a brew.
Steep the chicken overnight, serve cold in slices.
