Busan pork-and-rice soup

Dwaeji gukbap is Busan's pork-and-rice soup, born in the post-war years from US army supplies and the resourcefulness of the port city.

A milky-white pork-bone broth is served with tender meat, rice and bold sides like salted shrimp and spring onions.

Ingredients

  • Pork bones & pork belly1 kg
  • Cooked rice4 bowls
  • Onion, garlic, gingersome of each
  • Spring onion1 bunch
  • Salted shrimp (saeujeot)to season
  • Gochugaru & chillito taste
  • Garlic chives (buchu)1 handful

Preparation

  1. Simmer pork bones for hours into a milky broth.

  2. Cook the pork belly in it and slice.

  3. Strain the broth and season boldly.

  4. Put rice and meat in the bowl, pour over hot broth.

  5. Serve with spring onion, salted shrimp and gochugaru.
