Anda bhurji is the Indian scramble: eggs fried crumbly with onions, tomatoes, chilli and spices - a lightning-fast street and breakfast dish.

From Mumbai's street stalls to every home kitchen it is ubiquitous; served with pav rolls or roti.

Ingredients

  • Eggs4
  • Onion & tomato1 each
  • Green chilli & ginger-garlicsome of each
  • Turmeric & garam masala1/2 tsp each
  • Fresh coriander1 handful
  • Vegetable oil2 tbsp

Preparation

  1. Fry onion, chilli and ginger-garlic.

  2. Add the tomato and reduce.

  3. Season with turmeric and garam masala.

  4. Add the beaten eggs and fry crumbly.

  5. Scatter with coriander, serve with pav or roti.
