Indian anda curry in a spiced onion-tomato sauce

Anda curry – egg curry – is a beloved everyday dish across India, especially common in Bengal and Punjab. It is quick, filling and affordable.

Hard-boiled eggs are briefly fried and simmered in an aromatic sauce of onions, tomatoes and spices – savoury, spiced and versatile.

Ingredients

  • Eggs (hard-boiled)6
  • Onions2
  • Tomatoes3
  • Ginger-garlic paste1 tbsp
  • Cumin, turmeric, garam masala1 tsp each
  • Chilli powder1/2 tsp
  • Coriander1 handful

Preparation

  1. Peel the hard-boiled eggs, score and fry briefly.

  2. Toast cumin, fry the onions golden brown.

  3. Reduce ginger-garlic and tomatoes.

  4. Season with turmeric, chilli and garam masala, add water for a sauce.

  5. Slip in the eggs and let steep, serve with coriander.
