Sweet sticky-rice pudding for Chinese New Year

Ba bao fan, “eight treasure rice”, is a classic Chinese festive pudding that symbolises luck and prosperity at New Year.

Sweet sticky rice is layered with eight dried fruits and nuts, steamed over red bean paste and served turned out.

Ingredients

  • Sticky rice300 g
  • Sweet red bean paste200 g
  • Dried fruit (dates, lotus seeds, goji)1 handful
  • Candied fruit & nuts1 handful
  • Sugar & lard/oil2 tbsp each
  • Wateras needed

Preparation

  1. Cook the sticky rice and mix with sugar and a little oil.

  2. Oil a bowl and line decoratively with fruit and nuts.

  3. Add a layer of sticky rice, place bean paste in the centre.

  4. Cover with sticky rice and steam 40-60 minutes.

  5. Turn out onto a plate and serve warm.
