Es Cendol

Indonesian iced dessert with green rice jelly

Es cendol is a refreshing dessert from Indonesia, also common in Malaysia (as cendol). The green rice jellies are coloured with pandan.

Over the worm-shaped green jellies go coconut milk, crushed ice and above all gula melaka – liquid palm sugar that gives it its deep sweetness.

Ingredients

  • Rice flour & tapioca starch100 g / 2 tbsp
  • Pandan extract1 tsp
  • Coconut milk400 ml
  • Gula melaka (palm sugar)150 g
  • Crushed iceas needed
  • Pinch of salt1 pinch

Preparation

  1. Cook rice flour, starch, pandan and water into a thick paste.

  2. Press the paste through a colander into iced water to form jellies.

  3. Reduce gula melaka with a little water into a syrup.

  4. Warm the coconut milk with a pinch of salt.

  5. Assemble cendol jellies with ice, coconut milk and syrup.
